Land of excellent wines and ancient, well established culinary traditions, Pavia province is a land worth tasting, to be savoured and enjoyed from the starting point of its food and its more unusual recipes.

Lomellina, Pavese and Oltrepò are places of great culinary interest with a history which intersects with that of its land and farming.

Rice and wine are the main players in the Pavia food and wine panorama. With its more than 80,000 hectares of rice paddies, Pavia province is number one in Italy for rice farming which is concentrated in particular in the Lomellina area. Oltrepò - on the border with Liguria and to the south of the Po River, has been a fine wine zone for centuries: Barbera, Bonarda, Muscat, Pinot Gris and Pinot Noir are just a few of the local DOC wines.

Pork is also one of Pavia's gourmet dishes with cured meats such as Salame di Varzi, cotechino and sanguinaccio. Varzese breed pig farming, a native Lombardy species which has only recently been brought back to the area, is also worth trying.

Also not to be forgotten are one unusual product per zone, the Lomellina goose, Pavese frog and Oltrepò game. Farm produce comprises many local products which are symbols of a culture and traditions which have deep roots in our land and history. For all these reasons, then, local restaurateurs can satisfy all tourist appetites and price brackets ranging from those looking for fine cuisine, local dishes or simply a quick lunch.
