Tra le risaie del Carnaroli da Carnaroli Pavese

Un viaggio nel Carnaroli da Carnaroli Pavese ci porta nel cuore del paesaggio della Lomellina, un tempo caratterizzato da foresta planiziale e aree paludose, oggi enorme distesa terrazzata di risaie.

 

Quelle risaie che davano vita al mare a quadretti in primavera, oggi meno visibile a causa del cambio delle varietà di riso e delle pratiche agronomiche. Quelle risaie lombarde dove nasce la maggior quantità di riso europeo (insieme ai vicini Vercellese e Novarese, in Piemonte). Quelle risaie dove è stata recuperata l'originale semente del riso Carnaroli. Che è certificata, appunto, come Carnaroli da Carnaroli Pavese.

Nato nel 1945 dopo anni di selezione nella cascina dell'agronomo e risicoltore Ettore De Vecchi, a Paullo (MI), il riso Carnaroli si presenta con un chicco grande e consistente, ma anche con una pianta alta e fragile (può arrivare a 2m di altezza, con forte rischio di allettarsi). In campo, le pannocchie di Carnaroli si riconoscono per le “ariste” rosse, delle sorte di lunghi baffi al termine di ogni chicco. Il nome? Forse deriva dal cognome di un acquaiolo che lavorava nella cascina di De Vecchi. Qualcuno invece sostiene che i baffi diano una colorazione rossastra all'intero campo (e da qui il nome).

Varietà storica della risicoltura italiana, il Carnaroli è detto il “principe” dei risi ed è sicuramente il più utilizzato per i risotti. Le dimensioni del chicco e l’alta percentuale di amilosio garantiscono infatti un’ottima tenuta in cottura. Ma oggi, in base alla normativa vigente, non sempre sotto il nome Carnaroli troviamo vero Carnaroli (ci sono tanti similari, come Karnak, Carnise, Caravaggio, Carnaval, Keope e Poseidone): ecco da dove parte il progetto “La Via del Carnaroli” della Camera di Commercio di Pavia e come si arriva alla certificazione Carnaroli da Carnaroli Pavese. 
Un marchio collettivo, che raggruppa 33 produttori in provincia di Pavia e che certifica la filiera in circa 6000 ettari di risaie coltivate a Carnaroli da vera semente Carnaroli (su circa 9000 in tutta Italia). 

Come trasformare questo prodotto in un'esperienza turistica? Visitare le risaie, anche in bicicletta, scoprendo le aree ancora allagate, dove la biodiversità è sempre più ricca, i riflessi affascinano e ci si può sbizzarrire con il birdwatching. Visitare i produttori, visitare le riserie, dove il risone viene trasformato in riso. E poi godersi un buon risotto!
